Dessert crumbles of apple, blueberry and millet

Sunday. Market day. Well, it was supposed to be. Each weekend here the surrounding towns alternate turns in holding popular markets, no matter the weather, providing locally grown produce, hot food, handmade goods, etc. Our weekend plans, we hoped, included a trip to a market about 20 minutes away, held in front of a historic station in a pretty town. The skies had other intentions, and the tinkling on our roof early Sunday morning, accompanied by a feeble gloomy sky, told me this was not meant to be a market day. The day brightened inside though, as I had the first long kitchen day in quite some weeks. Along with homemade granola, I made a warm, creamy soup of avocado, broccoli and hints of cumin and olive. Then there was zucchini & turmeric slice for lunch, and broccoli stems sauteed with pine nuts and olive oil. And finally, these crumbles. I often have apples, blueberries and dates with breakfast, and the combination in a crumble really appealed. The blueberries ooze into the apple, softening and flavouring it. Dates and honey add sweet bursts. Millet flakes are an ideal gluten-free eater’s safe alternative to oats: they have a nice crunch, going crispy with the honey.

We’re hoping to finally get to see the Deathly Hallows next week ~ I think part of me is too sad to see it end!

Soon, I’ll be joining in with another event, the Ratio Rally. I skipped the last few ~ semester life does take over. But I’ve just had holidays, so no excuse :) Better get cooking.

Recipe – Apple, blueberry & millet crumbles

For 4 individual ramekins or one large oven dish

 Ingredients list

  • 2 apples, peeled and diced into small chunks
  • 2 teaspoons cinnamon
  • ¾ cup blueberries
  • 6 dates, chopped into small pieces
  • 1 cup almond flour
  • ¾ cup millet flakes
  • 2-3 tablespoons of honey (as you like)
  • 3 tablespoons grapeseed oil

Method

    1. Preheat oven to 200C/400F. Put the apples into either 4 individual ramekins or one large oven dish. Sprinkle cinnamon over the top. Add the blueberries and dates.
    2. In a bowl, combine the almond flour and millet flakes.
    3. Add the honey and grapeseed oil. Use a knife to stir in a circular motion, until the mixture has turned crumbly.
    4. Pour the crumble mixture over the fruit. Bake in the oven for around 40 minutes, until the tops are brown and the fruit starts to bubble.
    5. Serve warm.

    I love your blog – first because it’s yours, second because you have amazing photographs and THIRD because your recipes are GF!!! Living with autoimmune arthritis made me try a GF diet almost 2 years ago and although I am in the category of sensitivity (so I will cheat every 5-6 months and pay the price for my indulgence) I love getting your posts knowing I’ll get a story about you and your life in Australia, those amazing photos and… yesterday, I was so happy to see a recipe that included ——> my favorite… APPLES!

    I posted it as my apple recipe of the day yesterday.

      Lovely to hear from you as always, Jenna! Thank you for your comment too, it’s so great to hear others are feeling better being gluten-free as well, I really think there’s something more that needs to be looked into. Hopefully we can spread awareness to help other people about gluten + autoimmune. Glad you liked the recipe, I’ll have to come up with something else apple-centred for you soon! xx
